The Ultimate Wedding: Cakes by Erin

This week, The Ultimate would like to thank Cakes by Erin for being such a great donor for the Ultimate Wedding and for Paul and Leah!

We are very excited to get to share the ins and outs of Cakes by Erin, and get to know a little bit more about the artist behind the cakes.

How this all got started: 

I started baking and making cakes for my children and family. My first cake was for my daughter’s first birthday, and she’s 20 now. I did it for fun for a while, slowly learning basic skills. The game changer was the competitions on Food Network. I would watch them and learn new skills, and what takes cakes to the next level.

Baking takes the cake: 

I prefer baking to cooking because I love the science and measurements of it. The cakes I make also involve a lot of art skills for decorating. I love to sculpt, paint and draw, and I get to use these skills with cake!

Claim to Fame: 

I’m self-taught both for baking and cake decorating. I actually didn’t know I could sculpt until I started making cakes. With decorating, there are always new skills to learn and techniques to try out. In the cake community, everyone loves to share how-to videos for new things they discover. It’s a lot of fun experimenting with new designs and skills.

Award Winning Cakes: 

I have been lucky to win BONS Best of North Shore a couple of time, Best of Boston and competitions on Food Network.

Biggest Baking Battle:

We are a nut free bakery so sometimes it’s hard to keep up with certain trends because of items that we can’t use on our cakes because of the nut factor. For example, a lot of places have used French macarons on their cakes, and we cannot because they use an almond flour to make them.

For cake decorating, we have had many challenges for testing our decorating skills. We had a to make a cake for the Red Sox when they won the world series in 2013, and we had less than 24 hours to design, bake, cool, decorate and deliver a massive cake to Fenway Park. That was a test of skills and working with no sleep!

Favorite Flavors:

I love our samoa cupcake and cake. It is a vanilla cake with chocolate ganache, toasted coconut and caramel. I also love our strawberry ganache cupcake and our chocolate vegan cupcake!

Wedding Cake 101:

At my shop, we do anything and everything for weddings. I love that we offer whatever the client is looking for. I have done traditional cakes, cupcake towers, custom-shaped cakes like suitcases or books. I even did a firetruck cake that reached over the traditional wedding cake.

I schedule all consults and tastings after shop hours on Mondays so I can give my clients my complete attention and ensure there are no interruptions.

Favorite Memories:

I have been doing this for so long that I have many. One of my favorite things in the world to eat is my grandmother’s apple pie. My birthday is in the beginning of January so for Christmas and my birthday I would just ask her to make me an apple pie! When I was about 19, she finally taught me how to make her pie, and it was the best birthday gift ever! I went home and made so many pies…and ate them…that I got sick to my stomach. Still the best gift ever!

My youngest daughter, Kerry, has always loved to come in and bake with me a the shop too. She’s 17 now, but used to pull up a big step stool next to me to reach the counter. She would take a recipe and go to town making gingerbread cookie dough etc. She was my tiny chef!

“I don’t have a special occasion – do you sell from your store?”

Not only are we a crazy cake shop, but we have a storefront for walk-in purchases too! We are a nut free bakery so I am beyond proud that we can offer nut free cupcakes and cookies and simple cakes for anyone to walk in and purchase.

Cooking Classes:

I tried at my old location, but didn’t have enough space. I am trying to figure out the best way to set it up at my new space so I can in the future.
